A Chinese matcha, organically grown on the Tai Shan tea plantation located in the northwestern part of Zhejiang province. As is the case with high quality gyokuros, the selected tea bushes are kept in the shade for some time before plucking to increase their chlorophyll content. Compared to the Japanese production, this light-coloured, reed green and finely powdered Matcha offers a rather robust character with a lot of volume and the authentic acerbity of typical green teas. The bowl becomes frothy green in colour, with a strong, fresh bouquet and a slight acidity in the aftertaste.
